The proper sharpening of a knife is crucial to its longevity. These methods significantly increase the temperature at the edge, which can lead to “burning” it, reducing its hardness and preventing it from holding a sharp edge.
The only correct way to sharpen a knife is with sharpening stones, a method that remains cool and allows for precise control.
